Simple Pot Roast, Spring Decor in Winter and Some Very Ugly Blueberry Muffins

Simple Pot Roast
While not fancy (most of our meals are not!), this is the roast I fall back on most often. I like the simplicity to really taste the beef and a smooth gravy. You can add potatoes for more heartiness. You can also add onion, garlic, worcestshire, broth, or bacon grease for a bit more flavor if you'd like. Country cooking isn't fancy, it's simple and that's what makes it delicious!

Chuck roast
Water or broth
Carrots
Butter
Salt and pepper to taste

Sear your pot roast on each side in butter on the saute function. Once seared, throw in carrots and add water or broth to about halfway up the roast. Slow cook on high 6-8 hours. Slice up, salt and pepper. To make a gravy, strain the broth left after cooking. Put back on saute and mix together cornstarch or a flour with a little cool water. Add in and stir until thickened. Season to taste and serve up!
