Raspberry Sauce
2 c. Raspberries
75 g Sugar
1 Tbsp lemon juice
1 tsp lemon zest
2 Tbsp Water
For the slurry:
1 1/2 Tbsp water
1 1/2 Tbsp cornstarch
1. Combine all of the ingredients in a small pot and cook until raspberries are soft and breaking down, about 15 minutes.
2. Strain through a sieve to get all of the seeds out, then pour the raspberry juice back into the pot.
3. Make the slurry by mixing the cornstarch and water together, then add it to the raspberry sauce.
4. Cook an additional 10 minutes or so, or until the sauce thickens and becomes clear and glossy instead of milky looking.
5. Enjoy!
