Ingredients:
3 medium sized apples
2 tbsp brown sugar
1 tbsp white sugar
1 tsp ground cinnamon
½ tsp vanilla extract
1 tbsp lemon juice
1 tbsp plain flour or cornflour (to thicken)
For the pastry:
1 sheet of puff pastry per 2 turnovers (use 3–4 sheets for 6–8 turnovers)
1 egg (for egg wash)
Optional: coarse sugar or cinnamon sugar for sprinkling on top
1. Preheat oven to 200°C (180°C fan)/ 400°F. Line a baking tray with baking paper.
2. Make the filling:
In a saucepan over medium low heat, combine apples, sugars, cinnamon, lemon juice, vanilla, and flour.
Cook for 5–7 minutes until apples soften slightly and mixture thickens. Cool for 5–10 minutes.
1. Prepare pastry:
Cut puff pastry sheets into squares (about 12x12 cm or 5x5 in).
Place a spoonful of cooled filling on one half of each square, leaving a small border.
1. Seal turnovers:
Fold the pastry over to form a triangle.
Press edges with a fork to seal.
Slice a small vent in the top with a knife.
1. Egg wash & topping:
Beat the egg and brush it over each turnover.
Sprinkle with sugar (optional).
1. Bake:
Place on the tray and bake for 15-20 mins minutes until golden and puffed up.
1. Cool & serve:
Let cool slightly before serving. Delicious warm with ice cream or cream.
