Gluten Free Chicken Pot Pie Filling
Ingredients
1.5 cups diced carrots
1.5 cups diced celery
1 cup diced yellow onion (about half a large onion)
4 cups diced russet potatoes (about 2 large potatoes)
6 tablespoons butter, divided
2 tablespoons bacon fat
1 head minced garlic
1.5 teaspoons salt, plus more to taste
1.5 teaspoons ground black pepper, plus more to taste
1.5 teaspoons ground white pepper, plus more to taste
1/2 cup gluten free all purpose flour blend
4 cups chicken broth
1.5 cups milk
2 12.5oz canned chicken breast
1 cup frozen peas
Method

I would recommend making the dough following this recipe exactly, except for substituting gluten free flour, up till Step 9. Then, while the dough chills, you can prep your veggies. And while you make the filling the dough can rise.
1. Dice carrots, onion, celery, potatoes into roughly equally sized cubes
2. Mince garlic
3. If using the Homemade Crescent Roll recipe, shape the dough into a crust shape, and lightly flour. Let rise for at least an hour while you make the rest of the filling.
4. Preheat oven to 400 degrees Fahrenheit
5. Melt 2 tbsp butter and 2 tbsp bacon fat in a large cast iron pot
6. Sauté onions for 5 minutes
7. Add carrots and celery and sauté for an additional 15-20 minutes
8. Add salt, black pepper, and white pepper
9. Add minced garlic, and sauté till fragrant
10. Add diced potatoes
11. Add remaining 4 tbsp butter, and melt
12. Add flour and cook for at least 3 minutes
13. Slowly add chicken broth, reserving about a cup
14. Slowly add milk
15. Add remaining chicken broth if necessary
16. Add drained chicken, and cook till heated through and potatoes are soft
17. Taste and adjust seasonings as needed
18. Transfer filling to baking dish, if needed
19. Add frozen peas to the filling
20. Bake for 10 minutes, or until the filling is bubbling hot. *Note: it is important that the filling itself is hot enough so the crust cooks properly
21. Add crust to the top of the filling, and bake for 12-15 minutes, or till the top is golden brown
