Rhubarb Syrup:
To make rhubarb syrup cut up the rhubarb into small pieces and soak them in white sugar. This may take a few days depending on how much rhubarb you have.

Pumpkin spice oat cookies:
1 cup unsalted butter, softened
1 cup white sugar
1 cup brown sugar
1 cup pumpkin puree
2 teaspoons vanilla extract
2 eggs
3 cups oats
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Pumpkin spice powder (as much as you prefer)

If you want a maple glaze for the cookies:
1/2 cup unsalted butter
1 cup maple syrup
2 cups powdered sugar
1 teaspoon vanilla extract

Preheat oven to 350 degrees F
Mix the wet and dry ingredients together
Using a spoon, divide the dough into parchment lined baking sheets
Bake the cookies for 15 minutes
Allow the cookies to cool before adding the maple glaze
