Standard Vinaigrette:
1 tbsp + 1 tsp white wine/champagne vinegar
1 tbsp + 1 tsp lemon juice
1/2 tsp Maldon salt
1 tbsp whole grain mustard
1 1/2 tbsp honey
1/2 cup (120ml) avocado oil
1/2 cup + 2 tbsp (145ml) extra-virgin olive oil
Greek/Italian Vinaigrette:
1/3 cup + 1 tbsp (93ml) red wine vinegar
3/4 cup (180ml) extra-virgin olive oil
1/2 tsp Italian seasoning
1/2 tsp dried oregano
5 sprigs of fresh thyme
1 tsp Dijon mustard
1 tsp honey
1/2 tsp chili flakes
1 large or 2 small cloves of garlic
1 medium shallot, finely diced
salt and pepper to taste
Green Goddess Dressing:
3/4 cup (180g) mayonnaise
1/4 cup (60g) sour cream
1 clove garlic, finely minced or smashed to a paste
3 anchovy fillets or 2 tsp anchovy paste
1 tbsp anchovy oil (from the tin)
2 tbsp fresh lemon juice
1 tbsp white wine vinegar or sherry vinegar
1/2 cup (10g) fresh parsley, chopped
2 tbsp tarragon, chopped (or sub more parsley)
2 tbsp chives, minced
salt and cracked black pepper to taste
Optional: small handful of watercress or spinach for color
Caesar Dressing:
1 whole egg
1 tsp water
2-3 garlic cloves
3 anchovies
1 tsp Worcestershire
1 tbsp lemon juice
1/2 tbsp white wine vinegar
3/4 cup (180ml) avocado oil
2 oz (56g) Parmesan
5 tbsp extra-virgin olive oil
salt and pepper to taste
Balsamic Dressing:
1/4 cup (60ml) balsamic vinegar
1 tbsp Dijon mustard
1 tbsp honey (adjust to taste)
1 garlic clove, minced
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
3/4 cup (180ml) extra-virgin olive oil
