Grilled Tofu Veggie Kabobs Skewers | Vegan Recipe with Tasty Marinade

Hello guys! Memorial day is tomorrow so I decided to make this recipe today so that it will be ready for ya'll to try out tomorrow. I made up this recipe but it came out FANTASTIC! It had a great grilled, smoked taste to it. I highly recommend this recipe for anyone who wants to grill out. Vegan and missing out when your family has a cook-out? Not anymore!
Ingredients:
1 block of firm or extra firm tofu (~14 oz)
2-3 zucchini
8 ounces baby bella mushrooms
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 onion
Skewers for cooking
For the marinade:
3 cups water
6 tablespoons soy sauce
1-4 tablespoons sriracha sauce (use less if you don't like heat, but I highly recommend all 4!)
2 tablespoons olive oil
1-3 teaspoons liquid smoke (depending on how smoky you want it)
1 1/2 teaspoons garlic powder
1 teaspoon ground black pepper
Instructions:
--Cut veggies to your liking, just make sure they're all about the same size. Drain tofu of water and cut into pieces about the same size as the veggies. Remove as much water as possible with paper towels without breaking the tofu's shape. Place tofu pieces on a plate with paper towel at the bottom and cover with more paper towels. Microwave for two minutes. Remove wet paper towels and replace with dry ones to soak remaining water.
--Place tofu and veggies in separate zip-lock bags. Add 1/3 of marinade to the tofu and 2/3 of the marinade to the veggies. Let marinate for at least one hour, but longer is better. While marinating, soak skewers in water.
--After marinate time is over, arrange the tofu and veggies on the soaked skewers in your preferred order. Grill the Kabobs/Skewers on low heat with the cover on until tofu and veggies have browned. Serve immediately. Enjoy!
