This is a recipe for a traditional Polish borscht and is usually served on Christmas Eve as a soup with dumplings, or potatoes . It can also be served in a cup, as an addition to croquettes which is one of my favorites.
Ingredients:
4 L Water (may use meat stock)
1 kg red beet root scrubbed well
3 medium carrots peeled
1 medium parsley root peeled
1/4 large celery root peeled
1 green celery stalk
1 medium yellow onion peeled
1/2 medium leek
1 medium granny smith apple cored unpeeled
5-6 garlic cloves
3-4 pieces dried mushrooms (optional)
1 salt to taste
1 black pepper to taste or peppercorns
1 sugar to taste
1-2 tablespoons lemon or vinegar to taste
3-4 bay leaves
5-6 grains allspice
1 tablespoon marjoram (optional)
