This is an easy-to-make spring rolls recipe that after some practice can be finished in 45 minutes. The tutorial will show you how to make spring rolls from scratch. Asian spring rolls recipe are found in many variations. The spring rolls will be crunchy on the outside and filled with tasteful and delicious stuffing. The spring rolls can work great in any aspects of a meal, from appetizer, through main meal until dessert.
Of course it is possible to adjust the filling to your own preference, it is all about your imagination. You can make the spring rolls in advance and keep them frozen in a closed container for up to one month.

Ingredients:
Spring rolls wrappers size 21.5 x 21.5 cm (8.5 x 8.5 inches) approx. 20 sheets
2-3 cloves garlic
1 teaspoon pepper corns
180 grams chicken, minced
2 handfuls or 1 small pack (40 - 50 grams) glass noodles
4-5 medium sized mushrooms, sliced
6-7 leaves cabbage, sliced
1 carrot, shredded
1 handful coriander, chopped
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 teaspoon chicken stock powder
2 teaspoons sugar
3-4 tablespoons water
3-4 tablespoons cooking oil (for stir-frying the filling)
Generous amount of oil for deep frying
Directions:
1. Soak glass noodles in room-temperature or warm water until softened.
2. Cut and slice mushroom, cabbage, carrot. (Or any vegetables you prefer)
3. Crush pepper and garlic to almost a consistency of a paste.
4. Add cooking oil in a pan and heat the pan on a stove at medium heat.
5. Start frying garlic paste. When the garlic is golden, add the meat.
6. When the meat is almost cooked through, add the mushrooms and fry a few minutes.
7. Add noodles, season with soy sauce, oyster sauce, chicken stock powder, and sugar.
8. Add a little water and stir-fry until all ingredients are well-combined
9. Turn off heat and add cabbage, carrot and coriander. Mix well. Do not overcook the vegetables.
10. Wrap filling in spring rolls sheets
11. Fry spring rolls in deep fryer or pan with frying oil.
12. Serve with dipping sauce of your preference.
Tips:
1. Add cabbage, carrot and coriander the last after the heat is off to make sure they are not overcooked after wrapped and deep fried.
2. When working with spring roll wrappers, cover wrappers with plastic food wrap or clean kitchen towel to prevent them from drying out and breaking.
3. Do not over stuff and wrap tightly so that spring rolls hold beautiful shape and become crunchy after deep frying.
