Recipe :
From Dollar Tree:
1 bag of TJ Farms Select Riced Cauliflower
1/2 pouch of Hormel pepperoni (2 pouches per box)
3 pack of Frigo Cheeseheads Original String Cheese
(I used 1 string shredded for the crust and 2 strings shredded for the top of the pizza)
up to 1/4 cup of Pantry Essentials Pizza Sauce
1/4 cup or less of Colonna Grated Parmesan Cheese
(I used about 2 tablespoons for inside of the crust and 2 teaspoons for the top of the pizza) So you can use more or less to taste
From your pantry:
1 Egg
(I would recommend that when you are adding the egg you take the cauliflower off of the heat and stir really fast, so that is becomes more of a binder vs cooked egg.)
Garlic powder and Italian Herbs to taste (optional)

Calories per Pizza:
Sauce 35
Parm Cheese 140
moz cheese 240 3 sticks
pepperoni 1/2 pouch 7 to 8 pieces 70
Cauliflower 57 calories

total 542 calories
Obviously you can reduce the cheese to save calories. You can cut the Parm cheese way down, I only ended up using probably 1/2 of what I poured out for the crust / topping. Also less Moz cheese as well.

Let me know your modifications in the comments and how you adjusted it for your dietary needs!!

I could see replacing with baby bell laughing cow cheese or light cheese vs the parm and the moz cheese.
This could definitely be adjusted for Weight Watchers and Slimming World Diet plans.
