*Ingredients:*
2 cups almond flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter (softened)
1/4 cup erythritol (or preferred keto sweetener)
1 large egg
1 teaspoon vanilla extract
1/2 cup sugar-free chocolate chips
*Instructions:*
1. Preheat the oven to 350F (175C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine almond flour, cocoa powder, baking soda, and salt. Set aside.
3. In a separate bowl, cream together the butter and erythritol until light and fluffy.
4. Beat in the egg and vanilla extract to the butter mixture.
5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
6. Stir in the sugar-free chocolate chips.
7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Gently flatten each cookie with a fork or your fingers.
9. Bake for 10-12 minutes, or until the edges are golden brown.
10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
