If we’re talking about healthy eating, this recipe is one of our favorite. The sweet and sour taste of tomatoes combined with chicken breasts really goes well with the bitter sweet spinach.
Ingredients:
1 whole Chicken breast (cut into bite size)
4 medium sized tomatoes (the more the merrier)
Spinach
Minced garlic (4 cloves)
1 medium sized Onion (diced)
1 – 2 teaspoons of fish sauce
1 cup chicken broth (or 1 chicken cube diluted in 1 cup water)
1 – 2 tablespoons corn oil
How to cook:
1. Prepare the tomatoes by slicing and removing the seeds.
2. Cut the chicken breast into bite sizes.
3. Heat 1 – 2 tbsp. of corn oil and sauté the garlic and onions.
4. Add the sliced tomatoes and cook for about 3 minutes.
5. At this point, you can now add the chicken breast.
6. Pour the fish sauce.
7. Mix the ingredients and cook until the liquid from the chicken breast
evaporates.
8. Add the chicken broth.
9. Cover and simmer on low heat for 15 – 20 minutes.
10. Add the spinach and cook for 3 more minutes.
11. Put salt and pepper to taste.
12. Serve.
