chocolate pastry cream:

Ingredients:

2 cups milk(500ml)

1/2 cup granulated sugar(100gm)

1 teaspoon vanilla extract

3 egg yolks

1/3 cup cornstarch(50gm)

150gm dark chocolate, chopped


Instructions:

In a medium-sized saucepan, heat the milk over medium heat until it just begins to steam. Remove from heat.

In a separate bowl, whisk the egg yolks, sugar and cornstarch together until smooth.

While whisking constantly, slowly pour the hot milk into the egg yolk mixture. Be sure to pour slowly to avoid cooking the eggs.

Once the two mixtures are fully combined, return to medium heat.

Continue whisking constantly until the mixture thickens and begins to boil. Once it reaches a boil, continue whisking for an additional minute or two.

Remove from heat and stir in the chopped chocolate until fully melted and incorporated.

Transfer the chocolate pastry cream to a bowl. Cover the surface of the pastry cream with plastic wrap to prevent a skin from forming.

Chill the pastry cream in the refrigerator for at least 2 hours before using.
