The Greatest Mango Curd on the Internet | Magic Marinade | ASMR

Описание: Mango season this year has been fantastic. It usually takes a few weeks for the really sweet mangoes to come in— they're usually bland or sour in the beginning, but this year's batch has been lush and sweet from the get go.

This of course means that I'm going to be doing my best to work mangoes into every dessert and delicacy I can concoct, and the heart of many of them is going to be this— a lush, Mango Curd.

It's actually a lot easier than other fruit curds, because mango pulp is already pretty thick and doesn't need to be reduced to concentrate first. You can use it as a spread, or in any way that you'd use lemoncurd, in a tart, squirted into a profiterole, the options are endless!

Ingredients
500g Mango Purée*
4 Yolks
60g sugar
60g Cold Cubed Butter

I used 2 Alphonso, 1 Kesar and 1 Totapuri mangoes. Totapuri mangoes have a slight tartness to them, so if you're not using this variety, add the juice of one lime.
