We have a confession to make: we are in a love triangle with granola!
It’s packed with vitamins, fibers, good carbs, and protein. It’s fun, it’s lightly sweet, it’s the perfect breakfast, but we also eat it as a dessert, and sometimes, as a late night snack.
Oats are where it begins and ends. What else? Nuts! Any nuts. Seeds? You bet. Take your pick, or throw them all in. Dried fruit is a must. Then there’s the wet part. Maple or agave are perfect, you can also use plant based milk - it naturally contains all the necessary oils and sugar that helps to stick those crispy lumps together.
Don’t forget spicing: a touch of salt, cinnamon, vanilla, and maybe some nutmeg, clove, or star anise - if you like it a bit more complex. Preheat your oven to 160°C (320°F), and line a baking sheet. In a large bowl, toss in those oats, nuts, seeds, spices, and salt. Stir it up, make sure every little piece is covered in the dry stuff.
Now, drizzle in that syrup and stir. Spread all the goodness on the baking sheet, and press it together here and there, forming random size little lumps. Pop it in the oven for 20-25 minutes, stirring halfway through. As the granola bakes, your kitchen will start to smell like… no, there’s nothing to compare it to. Soon the golden, toasty perfection will emerge.
We know you are tempted, buy don’t you dare eating it all of it while it’s hot. Let it cool down, because that’s when the crunch really starts to kick in. Meanwhile you can slice your dried fruits into bite-size pieces, and stir them in. And, by the way, you could also chop up some dark chocolate.
Store this beauty in an airtight container or a glass jar, and it’ll stay fresh for up to four to six weeks. But, let’s be honest, shall we? It might not last more than four days. What to eat it with? It’s perfect with plant-based milk, vegan yogurt, with a splash of tahini or peanut butter. But be careful: it’s super addictive. Ready to start preparing the next batch?
