Ingredients:
• 400g Tomatoes
• Chilli (fresh or dried) – adjust according to your spice preference
• 20g Coriander stems
• 20g Garlic
• ½ tsp Timbur (Nepali Sichuan pepper)
• 10g White sesame seeds
• 20g Soybean seeds
• Salt – to taste
• 1 tsp Kashmiri chilli powder
• 1 tbsp Refined oil
• 1 cup Water

Procedure:

Step 1 – Roast & Grind Seeds:
In a pan, dry roast the soybean seeds and white sesame seeds over medium heat until they turn light brown. Transfer them to a blender along with the timbur and grind into a fine powder.

Step 2 – Cook the Base:
In a kadai or pan, heat oil and sauté the garlic until it turns light brown. Add roughly chopped tomatoes and chillies, then sauté for a few minutes. Add salt and Kashmiri chilli powder for color. Pour in 1 cup of water, cover, and cook for 15–20 minutes until the tomatoes soften and the water slightly reduces.

Once cooked, add the powdered soybean, sesame, and timbur mixture. Toss in the chopped coriander stems and mix well. Let the mixture cool down to room temperature.

Step 3 – Blend to Chutney:
Transfer the cooled mixture to a blender and blend until smooth.
