⬇️ Ravioli al Matterello. No machine. Just flour, eggs, and a rolling pin.
📕 Egg Pasta Dough:
• 100g (3.5 oz) 00 flour
• 1 whole egg
• 1 pinch of salt
Technique:
1. Roll the dough with a matterello until thin and elastic.
2. Place the filling on half of the sheet.
3. Fold the dough over and press gently to seal.
4. Pass a ravioli pin over the sheet to shape.
5. Cut the ravioli cleanly with a pasta cutter.
🔔 Pro tip: Press the dough firmly around the filling before using the ravioli pin. Removing trapped air prevents the ravioli from bursting during cooking.
