Two Valentine’s bento cakes: Strawberry confit and Chocolate with Salted Caramel.

White Bento Cake 🤍
Sponge (11 cm pan)
2 eggs
60 g sugar
60 g flour
Bake at 180°C for 20–25 min. Cool completely.
Cream Cheese Frosting
110 g cold heavy cream (33%)
55 g powdered sugar
220 g cream cheese
Strawberry Confit
180 g strawberries
35 g sugar
5 g cornstarch + 25 ml water (slurry)
Lemon juice (to taste)
Assembly
Slice sponge in half.
Pipe frosting, add strawberry confit, cover, and frost the cake.
Chocolate Bento Cake 🍫
Sponge (11 cm pan)
2 eggs
60 g sugar
45 g flour
15 g cocoa powder
Bake at 180°C for 20–25 min. Cool completely.
Chocolate Cream Cheese Frosting
95 g cold heavy cream (33%)
40 g powdered sugar
220 g cream cheese
70 g dark chocolate (60–75%), melted and cooled to room temp
Salted Caramel
50 g sugar
25 ml heavy cream (33%)
40 g butter
Pinch of salt
Assembly
Slice sponge in half.
Pipe frosting and make a border. Add salted caramel, cover with the second layer, and frost.
Buttercream for Decoration (Mini Batch) 🎀
25 g butter (very soft)
50 g powdered sugar
5–7 g heavy cream (33%) or milk
Gel food coloring (optional)
Whisk butter until smooth. Add powdered sugar gradually. Add cream and whisk until silky. Color if needed.
