Breakfast Muffins
Today we are making breakfast egg muffins using a muffin top pan! These make the perfect bite size breakfast on the go and even perfectly sized to place in a sandwich!
Ingredients
Roughly 8-12oz cooked vegan breakfast sausage, crumbled
1 large tomato, diced
7oz vegan cheese shreds
Roughly 16oz of Liquid Vegan Egg (if using large muffin pan you will need more)
Salt and pepper
Chopped chives
Directions
Preheat oven to 375
Coat muffin top pan generously with oil
Fill each with a few pieces of your prepared vegan sausage
Sprinkle top of sausage with cheese shreds
Add diced tomatoes on top
Season with salt and pepper
Pour in your liquid vegan egg
Top each with a sprinkle of chopped chives
Bake in preheated oven for 30 minutes
If your using a regular muffin pan you will need a little more time depending on how much liquid egg is in each muffin
Remove from oven once egg is set
Cool for 5 minutes
Serve and enjoy!
