Ingredients
• Rice flour – 3 cups
• Besan (gram flour) – 2 cups
• Red chilli powder – 1½ tbsp
• Salt – as per taste
• Hing (asafoetida) – a pinch
• Turmeric – ¼ tsp
• Jeera – 2 tsp (lightly crushed)
• Oil – for making dough
• Oil – for deep frying

Method
• In a large bowl, add rice flour, besan, chilli powder, salt, hing, turmeric, and jeera.
• Mix all dry ingredients well.
• Heat oil and add hot oil to the flour mixture. Rub it in using your fingers.
• Gradually add water and make a soft, smooth dough.
• Fill the dough into a chakli press with star-shaped disc.
• Press spirals onto parchment paper or directly into oil.
• Heat oil on medium flame and deep fry the chaklis.
• Fry until golden, crisp, and evenly cooked.
• Remove and drain on a kitchen towel.
• Cool completely before storing.

• Dough should be soft but not sticky for perfect shaping.
• Always fry on medium flame to ensure crispness.
• Lightly crush jeera for better flavour.
• If chakli breaks while pressing, add 1–2 tsp warm water or oil.
• For extra crunch, you can add 1 tbsp roasted chana dal powder.
• Store in an airtight container – stays fresh for 2–3 weeks.
