Walnut Date Cake
INGREDIENTS
225 g unsalted butter, room temperature (plus extra for pan)
315 g all-purpose flour
8 g baking powder
5 g baking soda
3 g salt
10 g raw cacao powder
180 g granulated sugar (slightly reduced — dates add sweetness)
3 eggs
10 g vanilla extract
240 g sour cream
170 g walnuts, chopped
150 g brown sugar
½ tsp ground cinnamon
120 g dates, pitted and chopped (Medjool preferred)
2 Tbsp hot water (to soften dates)
METHOD
Preheat oven to 190°C. Butter an angel food cake pan.
Toss chopped dates with hot water and set aside for 5 minutes to soften.
Whisk flour, baking powder, baking soda, salt, and cacao powder.
Mix walnuts, brown sugar, and cinnamon. Divide in half; fold softened dates (with any remaining water) into one half.
Beat butter and granulated sugar until combined. Add eggs one at a time, then vanilla.
Mix in dry ingredients until just combined. Fold in sour cream.
Spread half the batter in the pan. Add the walnut–date mixture. Top with remaining batter and finish with the plain walnut mixture.
Bake 30 minutes at 190°C, reduce to 150°C and bake 20–25 minutes more until a skewer comes out clean.
Cool completely, unmold, slice, and serve.
