INGREDIENTS:
• 1 medium yellow onion, finely chopped
• 1 clove garlic, minced
• 1 can (400g) black beans, drained and rinsed (https://foodtolive.com/shop/organic-c...)
• 1/2 cup freeze-dried corn (https://foodtolive.com/shop/organic-c...)
• 2 tbsp tomato paste
• 1/3 cup vegetable broth
• 1 tsp cumin powder (https://foodtolive.com/shop/cumin-powder)
• 1/4 tsp cayenne pepper (https://foodtolive.com/shop/organic-c...)
• Salt to taste (https://foodtolive.com/product-catego...)
• Whole wheat tortillas
• Cheddar cheese, shredded (or any cheese you like)
• Olive oil spray (for brushing tortillas)
INSTRUCTIONS:
1. Heat a bit of oil in a pan. Cook the onion until soft, then add the garlic and stir for 30 seconds.
2. Stir in the black beans and mash them slightly in the pan. Then add the corn, cumin, cayenne, salt, tomato paste, and broth. Cook over medium heat for 5–7 minutes, stirring occasionally, until the mixture thickens.
3. Add cheese to one half of each tortilla, then spoon the bean filling on top. Fold the tortillas in half.
4. Place the tacos on a parchment-lined baking tray and lightly spray or brush the tops with olive oil.
5. Bake at 200°C (400°F) for 12–15 minutes, flipping halfway, until golden and crispy. Enjoy with salsa, cilantro cream, or your favorite dip.
