Ingredients:
• 200-250 g Button Mushrooms (cleaned and sliced or quartered)
• 1 cup Green Peas (matar – fresh or frozen)
• 2 medium Onions (finely chopped)
• 2 medium Tomatoes (finely chopped or pureed)
• 1-1½ tbsp Ginger-Garlic Paste (adrak lehsun paste)
• 1 tsp Cumin Seeds (jeera)
• 1-2 Bay Leaves (tez patta)
• 1-2 Dry Red Chillies (sabut lal mirch – optional for extra heat)
• ½ tsp Turmeric Powder (haldi)
• 1 tsp Red Chilli Powder (lal mirch powder – adjust to taste)
• 1-1½ tsp Coriander Powder (dhaniya powder)
• ½-1 tsp Garam Masala (optional, for extra flavor)
• Salt to taste
• 3-4 tbsp Oil (or 2 tbsp oil + 1 tbsp butter for richness)
• 1 cup Water (or as needed for gravy)
• Fresh Coriander Leaves (chopped, for garnishing)
Step-by-Step Instructions:
1. Prepare the ingredientsRinse the mushrooms gently (don’t soak them), pat dry, and cut into medium slices or quarters. Keep the peas ready (if using fresh peas, you can lightly boil them first if they are not tender).
2. Heat the panTake a kadai or pan and heat it on medium flame. Add 3-4 tbsp oil (or 2 tbsp oil + 1 tbsp butter for a richer taste). Let it get hot.
3. Add tempering (tadka)Add 1 tsp cumin seeds (jeera), 1-2 bay leaves (tez patta), and 1-2 dry red chillies. Let them sizzle and release aroma for 20-30 seconds.
4. Sauté onionsAdd finely chopped onions. Fry on medium heat for 4-5 minutes until they turn golden brown (stir occasionally).
5. Cook mushrooms & peasAdd the sliced mushrooms and green peas. Mix well and sauté on medium-high heat for 5-6 minutes. Mushrooms will release water and shrink — keep stirring until the raw smell goes away.
6. Add ginger-garlic paste & dry spicesAdd 1-1½ tbsp ginger-garlic paste. Sauté for 1-2 minutes until the raw aroma disappears.Now add ½ tsp turmeric powder, salt to taste, 1 tsp red chilli powder, 1-1½ tsp coriander powder. Mix everything really well.
7. Cook the masalaFry the masala on medium heat for 8-10 minutes. Stir continuously so it doesn’t stick or burn. The masala should start leaving oil from the sides (this is important for good flavor!).
8. Add tomatoesAdd chopped tomatoes (or tomato puree). Mix well, cover the pan, and cook on low-medium heat for 8-10 minutes until tomatoes become soft and mushy, and oil separates.
9. Make the gravyAdd ¾ to 1 cup water (adjust for desired gravy consistency — more water for thinner gravy). Mix and let it come to a boil.Cover and simmer on low heat for 5-7 minutes so all flavors blend beautifully.
10. Final touchCheck salt and spice levels. Add ½ tsp garam masala (optional) for extra aroma.Garnish with fresh chopped coriander leaves.Turn off the flame and cover for 2 minutes.
Your delicious Matar Mushroom Ki Sabji is ready! Serve hot with roti, paratha, naan, or steamed rice. It tastes even better the next day!
