I always like to start my time in a country with a food tour so I can understand the local cuisine, but I have no idea what to order or where to go for the best street food in town! That’s why enlisted the help of Vincent from Backstreet Academy who is an expert in Filipino street food here in Cebu City, the centre of the vast Visayas region. In this 2 part series Vincent and I will explore the bustling food scene of downtown Cebu City and learning about the unique and diverse culinary traditions of the Filipino people.
In Part 2, we explore the Carbon Market, a bustling wet & dry market in downtown Cebu City where locals come to get everything they need at bargain prices. And where people congregate, so do street food! Nearby we also get to try porcupinefish stew, a local delicacy on the island – don’t worry it’s not poisonous! Then we finish off the tour with the iconic Filipino dessert – halo halo – which true to its name is a smorgasbord of seemingly random ingredients that turn out to work surprisingly well together!
What I ate in Part 2:
1. Larang na tagotongan – a hearty porcupinefish stew, an exotic delicacy in Cebu!
2. Bahalina – local wine made from fermented coconut sap
3. Cacao – also known as the “drink of the gods”, basically unprocessed chocolate!
4. Puto bumbong – pink sticky rice topped with muscovado (brown) sugar
5. Halo halo – literally “mix mix” and that pretty much describes the dish – a mix of a whole bunch of stuff including ube ice cream, corn flakes and jackfruit!
