When I cooked this pasta for the first time, I wasn’t sure if my family would enjoy it. Now they ask me to make it every week! It’s a simple yet incredibly delicious dish: sauté mushrooms and spinach with onion and garlic, add cream and cheese for richness, toss with baked pasta, and you’re done.
I used thyme to give the dish a rustic, earthy aroma—what I call the “flavor of the mountains.” That’s because thyme reminds me of spring hikes in the mountains, where I collected wild thyme and carried its fragrance home. Cooking with thyme brings back those memories and adds a natural, grounding taste to the dish. You can also try basil for freshness, or add serrano pepper if you like it spicy. Personally, I love the heat, but my little girl doesn’t, so I happily skip it. That’s one of the sweet compromises of being a father.
I didn’t include exact ingredient amounts because this recipe is flexible. Adjust everything to your taste and mood. I used frozen spinach—it’s affordable and just as nutritious as fresh. As for mushrooms, any variety works, but I like experimenting with different types or combinations to discover new flavors.
