Vegetable Grain Salad

Описание: This Vegetable Grain Salad is the perfect dish to bring to any potluck! And it's what I want to each for lunch every day, too.

This recipe is delicious, gluten free, nutritious, easy to make in advance and totally vegan.

In this video, I add cucumber, cherry tomatoes, celery, parsley and olives but feel free to use the grains as a canvas and use what you have on hand and what you like. Just make sure you have some crunch to make it satisfying and interesting in texture.

Vegetable Grain Salad

Serves 4
INGREDIENTS

¼ cup white or red wine vinegar
½ teaspoon salt
½ teaspoon sugar
⅓ cup extra-virgin olive oil
3 - 4 cups Big-Batch Grains, thawed
2 cups chopped cucumber
2 cups halved cherry tomatoes
1 cup chopped celery
1 cup chopped fresh parsley
¾ cup chopped pitted kalamata olives
1 cup crumbled feta or soft goat cheese (optional)

INSTRUCTIONS

1. Whisk the vinegar, salt and sugar together in a very large bowl. Whisk in the olive oil.
2. Stir in the grains, cucumber, tomatoes, celery, parsley and olives. Sprinkle with cheese if using.

MAKE IT AHEAD: This keeps well (without the cheese) for up to 24 hours in the fridge. Stir well then add the cheese (if using) just before serving. This recipe doubles–and even triples–well.
