They didn’t look like the fluffy cakes we enjoy today. It was only in the 17th century, when baking tools improved and sugar became more common, that cakes became soft, airy, and closer to what we know now. Amazing how far cake has come!
🍰 Tea Cake Recipe
Step 1
Preheat your oven to 170°C.
Grease a 27cm x 18cm slice tin and line it with baking paper, letting the paper rise above the tin — this gives your cake space to rise beautifully.
Step 2
In a bowl, cream the butter, sugar, and ½ cup of condensed milk until the mixture is pale and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla essence.
Step 3
Sift your flour.
Gently fold the flour into the batter in two batches, alternating with the milk mixture.
Use a fork or spatula and fold softly until the batter becomes smooth and lump-free.
Step 4
Pour the batter into your prepared tin and smooth the top.
Bake for 45 minutes, or until a skewer inserted in the centre comes out clean.
Allow the cake to cool completely.
Step 5
In a small saucepan, place the remaining condensed milk, golden syrup, and extra butter.
Stir over low heat for about 5 minutes until the mixture becomes thick, glossy, and beautiful.
Let it cool slightly, then spread it evenly over the cooled cake.
Slice into squares and enjoy!
