A flambadou works because it stores an enormous amount of heat in its red-hot iron cone, then transfers that energy into fat the moment it’s poured in. At around 600–800°C, the iron makes the fat rapidly break into a hot mist of tiny droplets and vapors, giving it huge surface area, so it reaches its flash point almost instantly and ignites when exposed to oxygen.
That flaming shower isn’t just for drama, though... burning fat delivers intense radiant heat, accelerates Maillard browning, creates a flavorful crust, and adds smoky, roasted flavor compounds to the meat.
