Apple Banana Oat Cake (No Refined Sugar, No Almond Flour)
Makes 1 loaf in 8×4.5 inch pan
📝 Ingredients:
2 medium apple, grated
1 medium banana, mashed
30g naturally sun-dried raisins
50g finely chopped dates (about 8 pieces)
40g dried cranberries(no sugar)
2 eggs, separated
1/2 tbsp vinegar
1/2 tbsp baking soda
1/2 tsp salt
50g no sugar added dried dates(8 pieces)
270–275g oat flour (replace almond flour entirely)
50g oil
260g milk
1 tsp grated lemon zest
40g chopped walnuts (plus extra for topping, optional)
Edit***use 1 tsp baking soda instead of 1/2 tbsp baking soda
