Описание: Receiving & Sorting Live tilapia are transported to the factory and sorted by size and quality. Stunning & Bleeding Fish are stunned (e.g., using electrical or CO₂ stunning) to ensure humane processing. Bleeding is performed to improve meat quality. Scaling & Cleaning Scales are removed using mechanical scalers. Fish are thoroughly washed to remove impurities. Gutting & Trimming Automated gutting machines remove internal organs. Any remaining blood or membranes are cleaned manually or mechanically. Filleting & Deboning Filleting machines cut along the backbone to produce boneless fillets. Optional skinning may be performed depending on product requirements. Quality Inspection & Grading Fillets are inspected for defects (color, texture, parasites). Grading by size and weight for packaging consistency. Washing & Sanitizing Fillets undergo a final wash with chilled water or antimicrobial solutions. Glazing (for frozen products) Fillets are dipped in ice water to form a protective ice layer before freezing. Freezing & Storage Individually quick frozen (IQF) or block frozen using blast freezers. Stored at ≤ -18°C until distribution. Packaging & Labeling Vacuum-sealed or portioned into consumer/industrial packaging. labeled with product info (weight, origin, expiration date). Quality Control & HACCP Compliance Regular checks for microbial safety and temperature logs. Distribution shipped to retailers, restaurants, or further processing facilities
