Cheesy, Creamy, Cozy… You NEED This Casserole!
Chicken Broccoli Cheese Casserole
Ingredients:
2 ½ to 3 cups chicken, cubed (rotisserie works great)
4 cups fresh broccoli florets, steamed (or frozen, thawed & drained)
2 cups cooked rice (1 cup dry)
8 oz sharp cheddar cheese, shredded (it will melt better if you shred it yourself)
3 tbsp butter
3 tbsp flour
2 ½ cups milk (whole or 2%)
1 ¼ cups chicken broth
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
Salt & pepper to taste
Instructions:
1. Preheat oven to 375° F. Grease a 9x13 baking dish.
2. Steam or blanch broccoli 3-4 minutes just until it is tender-crisp. If frozen, thaw, drain, and pat dry.
3. Melt butter in a saucepan over medium heat. Stir in flour, cook 1 minute.
4. Slowly whisk in milk and chicken broth and stir until smooth. Simmer until thickened, about 4-5 minutes.
5. Stir in garlic powder, onion powder, paprika, salt, pepper and stir until spices are dissolved.
6. Add 2 cups shredded cheddar cheese a little bit at a time. Stir and make sure it is melted before adding more.
7. Add chicken, broccoli, and rice to a casserole dish and mix together. Pour the cheese sauce over and stir until evenly coated. Top with the remaining cheese.
8. Bake for 25-30 minutes, until golden and bubbly.
Let it rest for 5-10 minutes before serving.
