Ingredients:
• Egg yolks — 2
• Sugar — 50 g
• Mascarpone — 230 g (cold)
• Vanilla bean seeds
For soaking:
• Espresso / Cold brew — 250 ml, cooled
• Sugar — 1–2 tsp (to taste)
• Unsweetened cocoa powder
1. Make the zabaglione
Whisk egg yolks, sugar, and vanilla over a double boiler (the bowl should not touch the water) for 5–7 minutes, until pale, thick, tripled in volume, and heated to 62-65°C / 144-149°F. Remove from heat and let cool slightly.
2. Add mascarpone. Gently fold in cold mascarpone in parts using a spatula. Do not overmix, the cream should stay smooth.
3. Quickly dip savoiardi into cold espresso.
Layer cookies and cream.
4. Chill for at least 6 hours, and generously dust with cocoa before serving.
