Croquettes or Croquetas is a small often rounded mass consisting usually of minced meat, fish, or vegetable coated with egg and bread crumbs and deep-fried.Croquettes originated in France, where they feature a mashed potato center, but when croquettes traveled down to Spain, they became croquetas, and took on something a bit different. Rather than being filled with potatoes, Spanish croquetas are filled with a creamy bechamel sauce.

Today recipe is Bacalao Spanish Croquetas
for the ingredients:
120 gram salted bacalao fish, washed and flaked
oil
onion, minced
Becahmel Sauce:
1 tablespoon olive oil
1 tablespoon butter
60 gram sifted flour
1 cup milk
flour
eggwash (1 egg + 1/8 cup milk)
breadcrumbs
oil for deep frying
You can make a variation of this croquetas, instead of salted bacalao, you can use fresh bacalao or ham and cheese or vegetables.
