Veg Dum Biryani
Ingredients:-
Cauliflower- 1/2 cup
Potatoes- 1/2 cup
Carrot - 1/2 cup
Beans - 1/4 cup
Green peas- 1/4 cup
Basmati rice- 2 cups
Ginger garlic paste- 1 tb spn
Chilli powder- 1 tb spn
Coriander powder- 2 tsp
Garam masala - 1/2 tsp
Brown onions- 1 cup
Curd - 1 cup
Green chillies- 4 slit
Mint leaves- handful
Rose essence- few drops
Kewra Water- few drops
Saffron water - 1 tsp
Lemon - 1
Water- As Required
Salt - To Taste
Method:-
Boil the vegetables one by one in hot water till they’re half done and transfer to a bowl . Now marinate vegetables with ginger garlic paste, chilli powder, coriander powder, garam masala, green chillies, mint leaves, brown onions, salt, curd, lemon and mix it well.
Transfer this to the biryani pan and add some oil and mix it again.
For Rice
In a large pot of boiling water add oil, whole garam masala, salt and mix it.
Then add soaked basmati rice and cook for 8-9 minutes. Once the rice is 80% done strain and layer it on the vegetables. Top it with mint leaves, saffron water, rose essence, Kewra water and seal the lid tightly.
Cook on high flame for 5 minutes then on low flame for 5 minutes.
Switch off and rest for 5 minutes.
Serve the piping hot Biryani with Cucumber Raita
