INGREDIENTS & NOTES

#1 Lemon & Poppyseed Oatmeal 0:30

½ cup quick cooking oats (50g)
a generous pinch of salt
1 tsp vanilla extract or a few vanilla aroma drops
1 tbsp poppy seeds
1 tsp fresh lemon zest
⅔ cup plant based milk (160ml)
1 tbsp maple syrup, or to taste
1 splash of water, or more, if needed to adjust consistency

toppings of choice (for example unsweetened soy yogurt, granola, more lemon zest etc)

→ serves 1

#2 Glutenfree Kimchi Pancakes 1:43

½ cup chickpea flour (70g)
¼ tsp salt
¾ tsp baking powder
1 tbsp white wine vinegar
½ cup non dairy milk (125ml)
1-2 spring onions
3-4 tbsp vegan kimchi
100g firm tofu, shredded (3.5oz)

1 tbsp veg oil for frying, more if needed

optional toppings of choice (for example unsweetened soy yogurt, crispy chili oil, spring onion, sesame seeds)

→ yields 3-4 medium pancakes


#3 Salted Vanilla Cold Foam Cold Brew 3:27

for 2-3 servings cold brew:
40g coarsely ground coffee (~4-5 heaping tbsp)
560ml water (2 ¼ cups)
→ allow coffee to soak for 8-12 hours

for 1 serving cold foam:
~⅓ cup (80ml) barista style oat milk
½ tsp vanilla extract or a few drops vanilla aroma
pinch of salt
1-2 tbsp oat or soy cream
2 tsp maple syrup

per glass:
1 handful ice cubes
cold brew to taste (i do about ¾ cup)
cold foam to taste


#4 Cinnamon Cookie Oat Shake 5:29

1 handful Deglet nour dates (6-8 dates)
200g silken tofu (3.5oz)
1 scoop of vanilla protein powder
1 tbsp almond or cashew butter
1 tsp vanilla extract or a few vanilla aroma drops
2-3 tbsp quick cooking oats
pinch of salt
¾ tsp cinnamon
1 tbsp flax seeds
1-2 tsp maple syrup (optional)
2 handfuls ice cubes
160ml plant milk (⅔ cup)


#5 Protein Cookie Dough Bars 6:44

110g quick cooking oats (1 cup plus 2 tbsp)
¼ tsp salt
1 dash cinnamon
400g can of white beans, drained and rinsed (14oz)
⅓ cup maple syrup (80ml)
2 tbsp veg oil (sunflower seed or melted vg butter/coconut oil)
1 ½ tsp vanilla extract or a few vanilla aroma drops
4 tbsp oat milk (or 1 more to adjust consistency)

4 tbsp dark chocolate chips to be mixed into the batter

5-7 tbsp dark chocolate chips plus 1 tbsp coconut oil to be melted
→ using a microwave (check and stir every 15 sec to avoid burning) or the oven (i use a heatproof dish and then leave it in the oven for 3-5 min at 150C or until chocolate is partially melted, then i remove the bowl from the oven, allow it to sit on my stove or counter for 3-5 min, stir, then it should be fully melted)

→ yields one 20cm (8 inch) loaf pan


#6 Miso Soup Breakfast 9:04

2 cups water (500ml)
1 tsp dried wakame (or 1 sheet nori ripped to bits)
2-3 dried shiitake mushrooms
1 tbsp white wine vinegar or lime juice
1 tsp maple syrup
1 heaping tbsp light miso paste + 1 splash warm water
100 - 150g plain tofu (i used softer tofu from the asian supermarket) (3.5oz-5.3oz)
1-2 spring onions
sesame for the top

serve with toasted bread + vg butter + salt (or fluffy rice)
cucumber + salt + sesame seeds + crispy chili oil

→ serves 1
