Recipe ingredients:
Serves 1
100g tuna (canned) drained
1 spring onion, chopped
5 cherry tomatoes, halved
120g black beans (canned), drained & rinsed
2 artichoke hearts (from a jar) quartered
A handful of parsley leaves, roughly chopped
For the dressing:
1 tbsp extra virgin olive oil
Juice of 1/2 lemon
1 tsp Dijon mustard
Pink salt
Black pepper
