In 2024 Wine-Searcher embarked on a project to make our own wine. A large proportion of our team have winemaking and viticultural experience so we thought it would be great for them to show the rest of us how it is done. We bought a ton of Hawkes Bay Syrah from a vineyard in the premium Bridge Pa Triangle sub-region to work with. The Wine has now finished alcoholic fermentation, has completed malolactic conversion and is ageing in barrel, so we thought now would be a great time to look back at its progress so far.
We made our Syrah at the Westbrook winery in West Auckland. Here you see the team measuring the wine's specific gravity (density) to gauge if all the sugar has been converted into alcohol. This way they can be sure fermentation is complete. Obviously it helps if the measure you use is big enough to take both the wine and the hydrometer!!
When the hydrometer is floating in the wine the depth it floats at can be measured against the scale on the neck to give the specific gravity.
