Lemon Rice: An Indian Fried Rice with the fresh zing of Lemon and piquant spices.
RECIPE:
Lemon Rice

Serves 1-2 as an accompaniment.
Ingredients
All spoon measurements are level, unless otherwise specified.
200g Cooked Basmati Rice (left to dry/cool so not moist)
15 ml Oil (vegetable or sunflower) + 15ml Ghee (butter or vegetable)
0.5 tsp Black Cumin Seeds
0.5 tsp Mustard Seeds (Black)
Pinch of Hing aka Asafoetida (About one eight tsp, Optional)
60g Onion, roughly chopped (about half of a medium one)
2 Garlic Cloves, finely sliced
1-2 tsp finely chopped fresh Green Chilli (Optional)
0.33 tsp Salt
1 tsp Mix Powder
0.5 tsp Turmeric
1 tsp Tandoori Masala
0.5 tsp Kalonji Seeds aka Nigella
1 tsp Lemon Rind (finely grated or chopped)
1 TBSP Fresh Lemon Juice
2 TBSP each of Fresh Coriander Stalks and Leaves, very finely chopped
1 tsp Butter Ghee to finish (Optional)
Method
1. Pre-cook the Basmati Rice. Leave to cool and dry off a bit. Do not leave rice at room temperature for over an hour. If in doubt place rice container in ice cold water, or refrigerate after cooking.
2. In a wok, or high sided frying pan, heat 15ml Oil (1 TBSP) and 15ml Ghee (1 TBSP) on High heat.
3. Add 0.5 tsp Black Cumin Seeds, 0.5 tsp Mustard Seeds.
4. Add Pinch of Hing (Optional).
5. When Mustard Seeds start popping, add 40g Onion (roughly chopped), and 2 Garlic Cloves (finely sliced).
6. Fry for 30-45 seconds or until edges of onion browns, stirring/tossing continually. The sweetness of the part caramelised onions will compliment the sharpness of the lemon.
7. Add finely chopped Green Chilli (Optional).
8. Add 2 TBSP Fresh Coriander Stalks (very finely chopped)
9. Add 0.33 tsp Salt, 1 tsp Mix Powder, 0.5 tsp Turmeric, 1 tsp Tandoori Masala and 0.5 tsp Kalonji Seeds.
10. Continue stir frying for 20 seconds.
11. Add 1 tsp Lemon Rind.
12. Add the Cooked Basmati Rice and 2 TBSP Coriander leaf. Mix well, and continue stir frying for a minimum of 90 seconds, until rice is piping hot.
13. Add 1 TBSP Fresh Lemon Juice shortly before the end of cooking (e.g. 20 seconds).
14. Add 1 tsp Butter Ghee for extra richness (Optional).
15. Serve, sprinkling Fresh Coriander on top.
Notes
1. All Spoon Measurements are level, unless otherwise specified. i.e. 1 tsp = 5ml, 1 TBSP = 15ml.
2. Never leave cooked rice at room temperature for more than an hour or two. If not using immediately, always cool and refrigerate, or keep hot.
3. The use of Hing is optional (it may be hard to come by in some places). It adds a taste similar to onion, and works well in this dish.

5. Check the amount of salt in your cooked Basmati Rice. If it was cooked using salt (especially with the absorption method), then adjust the amount of salt when frying.
