Hannah Glasse was an 18th-century cookery writer in Georgian England. In her 1747 publication "The Art of Cookery Made Plain and Easy" she created a recipe for a syllabub comprising icing sugar, thick cream, orange flower water, orange juice, lemon zest and "half a pint of sack" (an old term for fortified wine). I recreate this recipe with a few tweaks - smaller quantities of everything because there are only two of us - namely, runny honey instead of icing sugar, some raw Skyr-type yoghurt replacing some of the cream and rosewater instead of orange flower water. My fortified wine of choice is dry sherry. This is a simple but elegant dessert, the perfect final note to a delicious supper and so easy to prepare.
