Here is easy to make Drumstick Potatoes Sabji. Drumsticks or सींग is very good for the hair, skin and bones. To make this healthy recipe cook potatoes, drumsticks, onion with spice. You can adjust the quantity of water according to your wish. Garnish with green coriander leaves. आलू सहजन की सब्जी goes well with chapatti. Ingredients
2 drumsticks, peeled and cut into 1½ inch pieces
1½ tbsps oil
1 tsp cumin seeds
¼ tsp asafoetida (hing)
2-3 green chillies, slit
2 medium potatoes, peeled and cut into 1 inch pieces
¾ tsp Tata Sampann Turmeric Powder
Salt to taste
1½ tsps sambhar masala
1 medium onion, cut into ½ inch pieces
1 medium tomato, cut into ½ pieces
2 tbsps chopped fresh coriander leaves
¼ lemon
Method
1. Heat oil in a kadai. Add cumin seeds and once they change colour, add asafoetida, green chillies and potatoes.
2. Add Tata Sampann Turmeric Powder, drumsticks, and salt and sauté for 1-2 minutes.
3. Add sambhar masala, onion, and tomato and mix well. Add ¼ cup water, mix, cover and cook for 12-15 minutes or till the potatoes are soft and drumsticks are soft, stirring in between.
4. Lightly crush the potatoes with a fork.
5. Add the coriander leaves and squeeze the juice of lemon and mix well. Switch the heat off, transfer the sabzi into a serving bowl. Serve hot.
