Making sourdough bread in a bread maker is a great way to use up excessive sourdough starter. You still get the great taste of a sourdough bread in a fraction of the time. Of course, because its done in a breadmaker, you still need to use yeast to get the dough to rise within the breadmakers rise and bake cycle. Either way, your breadmaker can make a perfectly tasting sourdough bread in 3 hours 30 minutes ... which is a fraction of the 16+ hours old fashioned way (lots of videos on my channel on sourdough bread making along with cookies and other things from sourdough)
A lot of questions about the menu settings for European cycle and this is what the oster manual says are the times for each step (total time is 3 hours 30 minutes) so you can find a menu that is close to your bread maker (doesn't have to be exact, just close ... the important thing to realize is that there is longer rise time compared to other cycles ... so just find a menu selection on your bread maker that has longer rise times)
knead 1: 5 min
rest: 10 min
knead 2: 20 min
rise 1: 39 min
punch 1: 10 sec
rise 2: 25 min 50 sec
shape 1: 10 sec
rise 3: 49 min 50 sec
bake: 60 min
total time: 3:30 hr
