Despite modernization and changing food habits, Kashmiris continue to use traditional sun-dried vegetables known as “Hokh Suen” on a large scale during winter. These dried vegetables remain in high demand during the harsh winter months, as people consume them to stay fit and to keep alive a centuries-old cultural practice.Kashmir has long been renowned worldwide for its rich cultural heritage, and the use of dried vegetables during winter is an integral part of its age-old traditions. In the past, heavy snowfall and frequent landslides on national highways often led to shortages of essential commodities, including fresh vegetables. To cope with these challenges, women traditionally prepared dried vegetables during the summer and autumn seasons by drying them under direct sunlight and storing them as emergency food stocks for winter.
