►My Mom's roast lemon chicken
1 whole chicken
2-4 small lemons
1 tablespoon plus 1 teaspoon kosher salt
1 teaspoon paprika
2 large garlic cloves, pressed
2 tbsp oil
2 cups water

Preheat oven to 300 degrees F. Wash, then thoroughly dry your chicken. Roll the lemons on a countertop to soften them, then pierce 20 times with a skewer. In a small bowl combine salt, paprika, garlic, oil. Rub all over the outside and inside of chicken, then cram as many lemons into the cavity as will fit. Place chicken on a greased rack set in a roasting pan, then pour 2 cups of water into the pan. Bake the chicken for 45 to 60 minutes per pound.
