Savory Broccoli and Cauliflower Bites!

What you need.
.
2 flax eggs, 1 tablespoon flax meal mixed with 3 tablespoons water equals one “egg”
2 cups broccoli floret
1 cup cauliflower florets
6 diced green onions
1 bunch of cilantro finely chopped
2 cups quinoa, cooked
1 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
1 teaspoon salt (optional)
½ teaspoon pepper
⅓ cup nutritional yeast
½ teaspoon baking powder
½ cup almond flour

What to do.
Preheat the oven to 375°F (190°C).
To make the flax eggs, combine the flax meal and water in a small bowl and set aside.
Cook the quinoa per directions.
Steam the broccoli and cauliflower until slightly soft, about 8-10 minutes.
Place the broccoli and cauliflower in a food processor and pulse florets to the consistency of rice.
Transfer the broccoli and cauliflower to a medium bowl and add the quinoa, garlic powder, onion powder, pepper, nutritional yeast, baking powder, flax eggs, and flour. Stir well until the ingredients are evenly distributed.
Use your hands to form bite-sized patties, about 1½-2 tablespoons each.
Place the bites on a parchment paper covered baking sheet and bake for 20-25 minutes, flipping halfway through.
Serve with your favorite savory sauce!
Lemon Tahini Dipping Sauce
What you need.
*1/4 c tahini
*Juice of one lemon
*1/3 c water
*Pepper to taste
*1 minced garlic clove
What to do.
Place all ingredients in bowl and whisk together. You can also add cashew cream or more tahini to thicken it if too runny.
