RECIPE
Ingredients for meatloaf:
2 lbs. ground beef
1 1/2 cups crushed pork rinds
1 egg
1-2 Tbs tamari sauce
2 tsp onion powder
1/2 tsp garlic powder
pinch salt
8 oz shredded American cheese
Ingredients for Big Mac sauce:
1/2 cup mayo
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp white wine vinegar
2 Tbs pickle relish
1 tsp sweetener
1 Tbs yellow mustard
Directions:
1. Preheat oven to 350 and line a loaf pan with parchment paper.
2. In a large bowl, combine ground beef, egg, tamari sauce, onion powder, garlic powder, salt, and pork rinds. Mix well.
3. Press half of the mixture in bottom of loaf pan leaving an indention in the middle.
4. Place cheese in the middle of the beef and cover with remaining mixture sealing the edges.
5. Bake 60-70 minutes.
6. While baking, make Big Mac sauce. Just whisk all sauce ingredients together and set aside.
7. Remove from oven and cool about 10-15 minutes.
8. Top with Big Mac sauce.
