Ingredients:
Cookie dough:
220g all purpose flour
10g cocoa powder
Pinch of salt
3g baking soda
110g unsalted butter (@adams_milk)
2 tsp vanilla
75g caster sugar
50g brown sugar
1 egg
Red food coloring (use gel-based only)
Cream cheese filling:
45 g cream cheese (@premamilk )
10g powdered sugar
25g unsalted butter (@adams_milk )
1 tsp vanilla extract or paste
Method:
First prepare the filling by mixing all the ingredients and then taking 1/2 tsp of cream cheese filling and freezing them for two hours. You can watch the video to see how to do this. The filling must be rock hard when you take it out.
Whisk together flour, cocoa, baking soda, and salt.
In another bowl, beat butter and both sugars until creamy.
Add egg and vanilla, then mix in dry ingredients and red food color.
Shape 70g dough balls, fill with cream cheese (be very quick because the filling will melt) chill the balls for 30 minutes in the fridge so the filling doesn’t ooze out when you bake and then finally bake at 180°C for 10–15 minutes.
