Let's make sweet rice balls, this is a popular Chinese dessert during Chinese New Year time! The ingredients and methods are very simple and friendly to everyone. The shell is soft and a little bit chewy and the peanut filling is sweet and rich!
Ingredients:
Peanut filling:
Roasted peanuts 90g
butter 35g
Water 10g
Sugar 40g
Sweet rice shell:
160g glutinous rice flour/sweet rice flour (the video is divided into two portions, 80 pieces each, and one portion adds 10g strawberry powder to increase the color)
Boiling water 70g
80-90g of warm water, just look at the state of the dough, the dough should be smooth and not sticky
You can make about 20 rice balls, shell is 15g each, fillings is 8g each.
Tips:
1. Put the peanut filling in the refrigerator or freeze it for a while to it's easier to handle.
2.Let your dough ball rest for 30 mins before using. Cover it to prevent it from drying out. If it is dry during the wrapping process, you can dip your hands in the water to help.
3. Don't overboil them, they might crack.
