Today I prepared one of my favorite Puerto Rican classics — Sorullos. These golden cornmeal fritters take me straight back to the island, to the sound of salsa playing in the kitchen and the smell of love in the air. Growing up, these were always on the table — crispy on the outside, soft on the inside, sometimes filled with cheese, and always served with that signature mayo-ketchup.
For me, sorullos aren’t just food — they’re memories. They remind me of watching my abuela shape them by hand, laughing as she told stories from her own childhood in Puerto Rico. That’s the heart of Puerto Rican cooking — it’s not just about recipes, it’s about tradition, family, and soul.
