EASY CINNAMON ROLLS || 8 INGREDIENTS || HEALTHY

Cinnamon rolls are definitely a childhood favorite! These rolls are oil free and refined sugar free, and absolutely DELICIOUS! They are really easy to make, only require 1 hour total to rise and about 25 minutes to bake. The best part is they are low fat so you can enjoy these on a weekend morning for breakfast if your feeling like you need a yummy warm baked good! Your kids and family will absolutely love these (I know mine does!).
P.S. IF YOU DON'T HAVE DATES OR YOU DON'T WAN'T TO MAKE THE DATE PASTE SIMPLY COMBINE 1/4-1/3 CUP OF SUGAR OR YOUR CHOICE WITH THE CINNAMON AND 1-2 TBSP APPLE SAUCE INSTEAD (THIS WORKS JUST FINE AND IS STILL DELICIOUS).
RECIPE:
1 CUP NONDAIRY MILK (WARMED UP)
1-2 TABLESPOONS MAPLE SYRUP
1 PACKET ACTIVE DRY YEAST
3 CUPS ALL PURPOSE FLOUR (PLUS EXTRA FOR ROLLING)
1/4 TSP SALT
1 CONTAINER SO DELICIOUS COCONUT MILK YOGURT (PLAIN OR VANILLA)
1-3 TSP CINNAMON
18 MEDJOOL DATES
ICING RECIPE:
2 CUPS POWDERED SUGAR
NONDAIRY MILK
DIRECTIONS:
1. MAKE THE YEAST MIXTURE BY WARMING UP THE NONDAIRY MILK WITH MAPLE SYRUP (IT SHOULD BE NICE AND WARM BUT NOT HOT!).
2. ONCE WARM ADD IN DRY YEAST AND LET IT ACTIVATE FOR ABOUT 5 MINUTES (IT WILL PUFF UP AND LOOK FOAMY).
3. IN A BOWL COMBINE THE FLOUR AND SALT, THEN ADD IN THE YEAST MIX AND COCONUT YOGURT. YOU WILL WANT TO MIX THE DOUGH UNTIL EVERYTHING IS PROPERLY COMBINED (ADD A LITTLE BIT OF FLOUR IF IT LOOKS TOO WET, BUT REMEMBER THE MIX WILL BE A LITTLE BIT STICKY STILL).
4. COVER DOUGH WILL A THIN TOWEL AND PLACE SOMEWHERE WARM TO RISE FOR 30 MINUTES.
5. START PREHEATING YOUR OVEN AT 350F.
6. WHILE DOUGH IS RISING START MAKING YOUR FILLING: ADD YOUR DATES AND CINNAMON INTO A FOOD PROCESSOR/BLENDER WITH A LITTLE BIT OF WATER (START WITH 2 TBSP AND ADD 1 TBSP AT A TIME IF IT ISN'T BLENDING WELL), BLEND UNTIL YOU GET A CREAMY CONSISTENCY.
7. ONCE THE DOUGH HAS DOUBLED IN SIZE PREPARE YOUR SURFACE AREA WITH PARCHMENT PAPER AND FLOUR THE AREA (THIS IS VERY IMPORTANT TOKEEP THE DOUGH FROM STICKING AND IT WILL MAKE THEM EASIER TO FOLD) AND PLACE YOU DOUGH SPRINKLE A BIT OF FLOUR OVER TOP AND KNEAD IT FOR ABOUT A MINUTE (DON'T ADD TOO MUCH FLOUR OR THE ROLLS WILL END UP DRY), THEN ROLL THEM OUT.
8. SPREAD ON YOUR CINNAMON FILLING.
OPTIONAL: ADD DRIED FRUIT OR NUTS. FOLD THE ROLLS.
9. PREPARE A BAKING PAN WITH PARCHMENT PAPER (IF IT ISN'T NON STICK ADD A TINY BIT OF OIL TO THE SIDES TO PREVENT FROM STICKING).
10. BAKE IN PREHEATED OVEN FOR ABOUT 25-30 MINUTES. THEY ARE DONE WHEN THEY LOOK SLIGHTLY GOLDEN (THEY WILL FEEL A LITTLE CRUNCHY ON THE TOP BUT ONCE YOU LET THEM SIT FOR A MINUTE OR SO THEY WILL SOFTEN, ALSO BECAUSE THEY HAVE TO OIL/BUTTER ON TOP THEY WON'T GET SUPER GOLDEN/BROWNED ONCE THEY ARE COOKED THIS IS NORMAL).
11. SERVE THEM IMMEDIATELY WITH THE ICING FOR BEST RESULTS OR STORE THEM IN AN AIR TIGHT CONTAINER AND WARM THEM UP IN THE MICROWAVE FOR 30 SECONDS TO 1 MINUTE BEFORE EATING. ENJOY!!!
ICING DIRECTIONS:
MIX THE SUGAR WITH THE NONDAIRY MILK UNTIL YOU REACH A SMOOTH AND THICK ICING CONSISTENCY (ADD IN 1 TBSP OF MILK AT A TIME).
