French Toast is one of those things that is delicious and satisfying, but I hardly ever make it because of the time it takes to get everyone's breakfast on their plates -- and then there's the fact that we end up eating in shifts because I can't time anything properly! Lol! So I'm a fan of the French Toast Casserole because it eliminates all the fuss of French Toast without skimping on the flavor. And pretty much anything with custard in it belongs in my mouth. So when I figured out how to make a custard filling with freeze dried eggs, I mean, forget about it!! I'm in!!
Thrive Life freeze dried eggs are one of my very favorite ingredients because they're so versatile. I put them in a scramble. In a quiche. In a muffin or a quick bread. Heck, I make mayonnaise with them. And now they're in a custard. What will I think of next?? I love our eggs. You should buy some from me. They've got a 7-year shelf-life unopened and a 1-year shelf-life after opening the can. That's pretty impressive. French Toast Casserole Custard Mix
(about 6 servings)
In a pint-and-a-half jar, add:
3/4 cup scrambled egg mix
1/3 cup instant milk
2 Tbsp butter powder
2 Tbsp cream cheese powder
2 Tbsp heavy cream powder
2 tsp vanilla powder
1 tsp cinnamon
1/2 tsp kosher salt
1/4 cup brown sugar
1/4 cup sugar
*For the optional crumble topping (highly recommend):
In a separate baggie, add:
1/2 cup flour
2 Tbsp sugar
2 Tbsp brown sugar
1/2 tsp cinnamon
pinch of salt
seal the baggie and add to the jar
To Prepare:
You'll need a loaf of French bread (or sourdough or brioche)
Cut the loaf into 1 inch cubes and place in a large bowl
Preheat oven to 375 degrees F
Set aside the crumble topping baggie
Into a blender, add 2 1/2 cups water and the contents of the jar
Blend for about 30 seconds or until the custard is well blended
Pour the custard mixture over the bread cubes and allow to soak
In a separate bowl, add the contents of the baggie and stir with a fork
Add 3 Tbsp melted butter and mix until it's got the texture of crumbly pebbles
Prepare a 9x13 baking dish with cooking spray or butter
Add the soaked bread and custard
Top with the crumble topping
Bake for 30 minutes or until topping is gold and bubbly
Sprinkle with powdered sugar and it's ready!
Serve with maple syrup and crispy bacon or fresh fruit
